BISCUIT PIZZA CASSEROLE

(my son's most picky friend requested this recipe so his mom could make it! From momswhothink.com)

3 cups Bisquick
1 cup milk
2 cans (8 oz each) pizza sauce (2 cups)
1 package (8 oz) sliced pepperoni
2 cups shredded mozzarella cheese (8 oz)

1. Heat oven to 375 degrees F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
2. In medium bowl, stir Bisquick mix and milk until soft dough forms.
3. Drop half of dough by spoonfuls evenly over bottom of baking dish (dough will not completely cover bottom of dish).
4. Drizzle 1 can pizza sauce over dough. Scatter half of the pepperoni over sauce. Top with 1 cup of the cheese.
5. Repeat layers with remaining dough, pizza sauce, pepperoni and cheese.
6. Bake 20 to 25 minutes or until golden brown.

Broccoli Casserole

Servings : 6    I double this recipe and bake in a 9 x 13 pan

1 package frozen chopped broccoli
1 can cream of mushroom soup
½ cup shredded sharp cheddar cheese
½ cup milk
½ cup mayonnaise ( I always use the mayo w/ olive oil)
1 egg, beaten
¼ cup finely chopped onion
½ cup finely chopped celery
1 - 2 tablespoons melted butter
¼ - ½ cup fine bread crumbs ( I use the cuisinart to make the bread crumbs)

Cook broccoli according to package directions; drain. Place broccoli in 10 x 6 x 1 ½ “ oiled baking dish. Combine soup and cheese, add milk, mayonnaise, egg, onion and celery. Stir until well blended. Pour over broccoli. Combine melted butter and bread crumbs, sprinkle evenly over soup mixture. Bake in preheated oven at 350 for 45 minutes or until bubbly and the crumbs are lightly browned.

Ravioli and Cheese Bake

            1 jar spaghetti sauce
            1 – 10 oz. can beef broth
            ¼ c. Italian dressing
            2 pkgs (9 oz. each) fresh ravioli
            1 c. mozzarella cheese

Preheat oven to 375.  Combine all ingredients except cheese in a 9x13 pan.  Cover with foil and bake for 50 minutes.  Remove foil and sprinkle with cheese.

Cheesy Chicken and Rice

            1 can cream of chicken soup
            1 1/3 c. water
            ¾ c. uncooked white rice
            ½ t. onion powder
            ¼ t. pepper
            bite size uncooked chicken pieces (about 8 tenders)
            ½ c. shredded cheese

Stir all ingredients except cheese together in a 9x13 pan, cover with foil, and bake for 30-40 minutes at 375 degrees.
